Eustathios was one of the most important scholar prelates of his time and greatly contributed to the cultivation of philology and theology.
He wrote (apart from various short speeches and reports):
Τα εν Τραπεζούντι σχολεία (Κωνσταντινμούπολη 1855).
Ο Βουλγαρισμός προ του ιστορικού, του εθνοπολιτικού και του εκκλησιαστικού βήματος (Κωνσταντινούπολη 1864), (a work in which the arguments of the Ecumenical Patriarchate against the claims of the Bulgarians for ecclesiastic autonomy are gathered).
Επιστολιμαία διατριβή κατά των προτεσταντικών πλανών (Κωνσταντινούπολη 1878), (published after his death).
He had also compiled bodies of notes for the lessons he taught in the Great School of the Nation: “Ιστορία της φιλοσοφίας”, “Εκκλησιαστική ιστορία” and “Δογματική θεολογία”.
